Ingredients:
1-8 oz. Brie cheese round
17 oz. pkg Frozen Puff Pastry - thawed (you will use 1 of the 2 pastry sheets for this recipe.)
1/4 cup Apricot or raspberry perserves.

Preparation:
Preheat oven to 425 degrees.
Lightly grease baking sheet with non-stick cooking spray.
Unfold pastry sheet on cutting board and place cheese wheel on top, leaving rind on.
Spoon preserves on top of cheese.
Bundle puff pastry up and around cheese wheel.
Transfer to prepared baking sheet.
Bake 20-25 minutes.
Let cool for 5 minutes.
Serve with crackers.
