Peanut Butter Cup Blondies

Makes: 12 bars

Ingredients:
3/4 cup Butter, room temperature
1/2 cup Creamy peanut butter
1 cup Granulated sugar
1/2 cup Light brown sugar
2 Eggs
2 tsp Vanilla
1 tsp Kosher salt
1 tsp Baking soda
2 cups All-purpose flour
2 cups Coarsely chopped peanut butter cups (about 12 oz.)

 

Preparation:
Preheat oven to 350 degrees.

Line a 11X7 baking dish with non-stick aluminum foil and coat with cooking spray and set aside.

In a large bowl with an electric mixer, mix the butter, peanut butter, and both sugars together for 2 minutes. Add in the eggs, vanilla, salt and baking soda and continue mixing for 1 minute, scraping the sides of bowl as necessary.

Turn the mixer on low and mix in flour until just combined.

Using a rubber spatula, fold half of the chopped peanut butter cups.

Spread the batter into the prepared pan and press the remaining peanut butter cups into the batter.

Bake for 30 minutes.
