Baked Oatmeal Muffins (Freezer-Friendly)

Makes: 12 muffins

Ingredients:
3 cups Old Fashioned oats
1 tsp Baking powder
1 tsp Ground cinnamon
1/4 cup Packed, light brown sugar
1/2 cup Mashed banana
1 1/2 cups Milk
2 large Eggs
2 tbsp Unsalted butter, melted
1 tbsp Vanilla
1-plus cups Chocolate chips (optional)
Can add blueberries or strawberries or a variety of fruits

 

Preparation:
Preheat oven to 350 degrees and spray muffin tin generously with cooking spray.

In a large bowl, stir together the oats, baking powder, cinnamon and light brown sugar.

In a separate bowl, whisk together the mashed banana, milk, eggs, melted butter and vanilla extract. Add the wet ingredients to the bowl of dry ingredients and mix until just combined. Fold in chocolate chips (optional)

Divide the batter among muffin cups. Add additional fruits on top.

Bake the muffins for 25-30 minutes or until they are golden brown on top.

Freeze leftovers.
