Orzo Salad With Yogurt Dill Dressing

Makes: 6-8

Ingredients:
1/2 pound Orzo pasta
1/2 cup Frozen peas
2 Roma tomatoes, seeds removed and diced
1/2 Cucumber, diced
1 medium Carrot, diced
Dressing:
1/2 cup Plain non-fat Greek yogurt
3 tbsp Minced fresh parsley
1 tbsp Finely minced fresh dill
1 tbsp Lemon juice
1 tspn Granulated sugar
1/2 tsp Salt
1/2 tsp Pepper
2 tbsp Olive oil

 

Preparation:
Bring a pot of salted water to a bowl and cook orzo according to package directions. In the last 2 minutes of cooking time, add the peas to the pot of orzo. Strain peas and pasta and set aside.

In a small bowl add all the ingredients for the yogurt dressing and whisk to combine.

In a large bowl, mix together orzo, peas, cucumbers, tomatoes and dressing until everything is coated with dressing.

Serve immediately or store covered in the refrigerator.

*This recipe makes a lot. However, if more is needed, the recipe can easily be doubled.
