Ingredients:
4 tbsp Unsalted butter, melted, plus more for brushing
1 1/2 cups Cornmeal, plus more for sprinkling
1 1/4 cups All-purpose flour
2 tbsp Sugar
2 tsp Baking powder
1 tsp Kosher salt
1/2 tsp Baking soda
2 cups Buttermilk
4 Scallions, chopped
1 1/2 cups Grated pepper jack cheese (about 3 ounces)
2 large Eggs, beaten

Preparation:
Preheat oven to 400 degrees.
Brush a 9X13-inch baking pan with melted butter and dust with cornmeal.
Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Beat together the buttermilk, eggs and melted butter in a small bowl. Pour the wet ingredients into the dry and whisk until just combined. Stir in the scallions and half the cheese.
Spread the batter in the prepared pan. Sprinkle with the remaining cheese and bake until a toothpick inserted in the center comes out clean, 18-20 minutes.
Cool on a rack for at least 10 minutes before unfolding and serving. Cut into squares and serve warm or at room temperature.
